Zabaglione is an Italian classic which can be served in various ways. This rich, eggy custard which is flavored with sweet wine is delicious over a slice of plain cake or sprinkled over fruit - ideally fresh berries. The recipe is simple and easy-to-do. It is the perfect round-up for a wonderful dinner.
INGREDIENTS: (Serves 4 People)
6 egg yolks
6 T sugar
1 C sweet white wine - for example Moscato
DIRECTIONS:
Use a double boiler or a metal bowl that can be suspended over simmering water
Beat egg yolks and sugar until thick and foamy
Beat in the wine
Set the mixture over the simmering water and whisk constantly for about 4-5 minutes
Watch out that the water doesn't come in contact with the bottom of the bowl
If the mixture heats too quickly, remove it from the heat for a few seconds. You want to cook the eggs slowly so the mixture stays very smooth. It will look foamy and be slightly thick.
Serve immediately or chilled, over fresh berries, or over cake
